The rich voice of Chef Nalan
Chef Nalan is a passionate culinary artist who celebrates the rich food culture of Kerala. He draws inspiration from his childhood, especially from watching his mother cook with care and affection. This early influence shaped his belief that food should feel warm, meaningful and full of life. His idea of “Dine Like a King” reflects his dream of giving every guest a memorable and royal experience through simple ingredients prepared with great love.
He is known for many creative dishes that blend tradition with fresh imagination. His Ambrosia Tea made with blue pea flower, his flavourful Vazhappoovu Biryani served inside a plantain flower and his special Fish Dhamaka placed on a plantain leaf are some of his highlights. Chef Nalan also prepares a wholesome Kerala meal with red rice, kanthari chammanthi, muthassi rasam and ethakka pulissery. Many of his ingredients come from his own organic farm which shows his commitment to purity and quality in every plate he serves.
